INGREDIENTS FOR 2 PEOPLE:
- 250 ml ORGANIC TONKOTSU BONE BROTH FOR RAMEN
- 2 tbsp peanut butter
- 1 tbsp sesame
- 2 shallots
- 150 g shiitake mushrooms
- 270 g organic udon noodles
- 2 tbsp (seafood) oil for frying
- Spicy chili oil to taste
- Spicy Chili Crunch or Peanuts Soya Rayu to taste
- Some spring onions (leeks)
- Salt to taste
ZUBEREITUNG
- Chop the spring onions (for decoration) and set aside.
- Bring the broth to the boil, add the peanut butter and stir over medium heat until it becomes a creamy sauce. Set the sauce aside.
- Chop shallots and shiitake mushrooms. Sauté shallots in oil over medium heat until translucent, add shiitake mushrooms and sesame seeds and fry.
- Cook the udon noodles in salted water until al dente. Drain well and then add to the pan. Let everything simmer together for a while.
- Carefully add the creamy peanut sauce to the noodles and vegetables. Mix gently until everything is coated in the delicious sauce.
- Distribute the noodles on plates. Top with spicy chili oil and peanut soya rayu, depending on taste and intensity. Finally, garnish with some sesame seeds and spring onions.
