Dashi is an integral part of Japanese cuisine - especially in ramen. The fishy broth is the ultimate base for real comfort ramen on a cold day. We take the fish motif even further and show you how to conjure up a hot bowl of crispy fish on the table in just a few steps:
Zutaten:
- 600g ramen noodles
- 525ml Dashi Umami broth
- 2cm fresh ginger
- 1 tbsp miso paste
- For the topping:
- 250g salmon fillet with skin
- 1 tbsp oil
- 1 stalk of leek
ZUBEREITUNG
- Cook pasta in boiling salted water according to package instructions. Heat dashi umami broth in a separate pot and stir in miso paste (do not boil). Fry the salmon fillet in a pan with oil on the skin side until it is crispy on the skin and translucent on the inside.
- Chop leek finely. Distribute the noodles in a bowl and pour in the broth.
