Gebackene Süßkartoffel mit Mango Curry-Fetacreme

Baked sweet potato with mango curry feta cream

Ingredients for 4 persons:

  • For the feta cream:
  • 150g feta
  • 3 tbsp olive oil
  • 1 tsp mango curry spice powder
  • 1 garlic clove, finely chopped
  • 2 tsp apple cider vinegar
  • Salt
  • For the sweet potatoes:
  • 4 sweet potatoes
  • 1 tsp coarse sea salt
  • 4 tbsp olive oil

And so it goes:

  • For the cream, stir all the ingredients until smooth.
  • Prick sweet potatoes several times with a fork. Rub with salt and olive oil and wrap in baking paper.
  • Bake the potato parcels in the oven at 180°C for 20 minutes.
  • Cut open the sweet potatoes, fill them with the mango curry cream and garnish with herbs if you like.
