Tomato sweet potato curry soup

Our next creation is going to be unusual. The soft sweet potato gives the dish a pleasant texture, and the tomato adds a fruity twist. The basis is our soup base, made from sun-ripened tomatoes from Italian organic farms. And since we love noodles, delicious glass noodles are added to the bowl here. Simply an all-round perfect dish that invites you to try it again.

Ingredients for 2 servings:

  • 525ml Power of the Sun Soup Base
  • fresh ginger
  • 1 clove of garlic
  • 1 onion
  • 150g tomatoes
  • 250g sweet potatoes
  • 100g sugar snap peas
  • 100g soy cream
  • 50g cashew nuts
  • oil, salt, pepper

And so it goes:

  • First, dice the sweet potato, onion and garlic and grate the ginger. Fry the diced sweet potato until it is slightly soft, then add the onion, garlic and ginger. You deglaze the whole thing with our Power of the Sun soup base and let it cook over medium heat until the sweet potato is cooked. Now add your soy cream, the quartered tomatoes and the halved snow peas, let everything cook for two minutes and season with salt and pepper. You can now serve your aromatic curry soup.
