Wash and chop herbs. Remove the seeds from the chilli and cut into small rings. Cook the rice noodles shortly according to the package instructions and collect them in a sieve. Bring 525 ml Phở soup base to the boil briefly in a pot.
Slice the meat very thinly and serve with the noodles in a large bowl. Pour boiling broth over it (the meat will cook but remain pink). Season with herbs, sprouts and sauces to taste. Drizzle some lime juice over it.
