For this hearty potato salad, it is best to choose a waxy type of potato that is easy to peel. You cook these until you can easily pierce them with a fork. Drain the potatoes and let them steam in a cold water bath. Then peel them off, cut them into slices and put them in a large bowl.
To make the lukewarm sauce for the salad, cut an onion into fine slices and put them in a pot. Add some herbal vinegar and a pinch of sugar to the onions. The whole thing is poured with organic pasture beef bone broth and seasoned vigorously with salt and pepper. Bring the broth to a boil and let it simmer for one to two minutes. This is how the flavors develop best.
Now mix the still hot broth with the potato slices and mix the salad well. To make your salad a little more colorful, cut the remaining vegetables and add them to the potatoes along with the peas. Served with freshly chopped parsley is a real treat!
