...but I couldn't help but take a sip of this awesome stuff straight from the bottle the other day. Absolute madness! My wife now thinks I'm crazy. But I think it's totally normal to simply add the mixture to any dish that needs a special, deep, umami-accented saltiness. I'll order more now.

What exactly is black garlic?
The garlic for our Black Garlic Shoyu Tare ferments for weeks until it finally takes on the typical black color and takes on a wonderfully aromatic fusion with soy sauce, caramelized ginger and chili. Then it is stirred gently and for a long time until all aromas and flavors have been transferred to the sesame oil and then heated to a maximum of 50 degrees. The Black Garlic Shoyu Tare not only spices things up, it actually determines the character of your ramen broth. A little bonus tip from Jörg: For ramen, simply place soft-boiled eggs in the tare overnight - a treat!
