INGREDIENTS FOR 2 PEOPLE:

  • 250 ml ORGANIC TONKOTSU BONE BROTH FOR RAMEN
  • 2 tbsp peanut butter
  • 1 tbsp sesame
  • 2 shallots
  • 150 g shiitake mushrooms
  • 270 g organic udon noodles
  • 2 tbsp (seafood) oil for frying
  • Spicy chili oil to taste
  • Spicy Chili Crunch or Peanuts Soya Rayu to taste
  • Some spring onions (leeks)
  • Salt to taste

ZUBEREITUNG

  • Chop the spring onions (for decoration) and set aside.
  • Bring the broth to the boil, add the peanut butter and stir over medium heat until it becomes a creamy sauce. Set the sauce aside.
  • Chop shallots and shiitake mushrooms. Sauté shallots in oil over medium heat until translucent, add shiitake mushrooms and sesame seeds and fry.
  • Cook the udon noodles in salted water until al dente. Drain well and then add to the pan. Let everything simmer together for a while.
  • Carefully add the creamy peanut sauce to the noodles and vegetables. Mix gently until everything is coated in the delicious sauce.
  • Distribute the noodles on plates. Top with spicy chili oil and peanut soya rayu, depending on taste and intensity. Finally, garnish with some sesame seeds and spring onions.
