Blitz couscous with dried apricots and pistachios

Ingredients for 2 people (as a side dish):

  • 1½ cups couscous
  • 1½ cups boiling water
  • 5 tbsp olive oil
  • 1 tbsp Ras el Hanout
  • Salt
  • Pistachios, a handful, peeled and chopped
  • Dried figs or dried apricots, a handful cut into strips
  • Lemon juice and zest from one lemon

And so it goes:

  • Pour the couscous into a heatproof bowl, add the olive oil, Ras el Hanout and the salt and massage thoroughly into the couscous.
  • Pour the boiling water over it and let it soak for 10 minutes.
  • Fluff the swollen couscous with a fork, then mix in the prepared dried fruit, lemon zest and juice, as well as the pistachios. Season with salt if desired.
